Eat Your Fibre: The 30-Gram Habit and a Warm Barley Bowl

Most of us eat half the fibre we need. Here is how to close the gap gently — plus a roasted vegetable and barley bowl with lemon-tahini.

Fibre is the least glamorous nutrient in the world and the one I would keep if I could only keep one. It feeds your gut bacteria, steadies your blood sugar, and makes lunch keep you going until dinner instead of until 15:30.

The recommendation is about 30 grams a day. Most people in Germany eat around 18.

Closing the gap without the drama

One bowl, roughly 14 grams of fibre — half a day's worth in one lunch.

The bowl below is my standard Sunday-evening batch. I roast a tray of whatever the market had, cook a pot of barley, and eat variations of it for three days with different sauces so it never feels like leftovers.

Roasted Vegetable & Barley Bowl with Lemon-Tahini

Bowl / lunch · Time: 45 minutes · Servings: 4 · Difficulty: Easy · Vegan

Ingredients

  • 250 g pearl barley
  • 400 g carrots and parsnips, in chunks
  • 1 piece small pumpkin or squash, cubed
  • 1 tin chickpeas, drained (400 g)
  • 2 tsp ground cumin
  • 4 tbsp olive oil
  • 3 tbsp tahini
  • 1 piece lemon, juice and zest
  • 1 clove garlic, grated
  • 100 g baby spinach or rocket
  • 3 tbsp pumpkin seeds

Method

  1. Heat the oven to 210 °C. Toss carrots, parsnips, pumpkin and chickpeas with the oil, cumin and salt; roast 30 minutes, turning once.

  2. Meanwhile simmer the barley in plenty of salted water for 25 minutes, until chewy but tender. Drain.

  3. Whisk tahini, lemon juice and zest, garlic, a pinch of salt and 3–4 tablespoons of warm water into a pourable sauce.

  4. Toast the pumpkin seeds in a dry pan for two minutes.

  5. Pile barley, roasted vegetables and raw greens into bowls, pour over the sauce and scatter the seeds on top.

Tip

Keep the components in separate boxes in the fridge and the bowl still tastes made-to-order on day three. A spoonful of harissa turns it into a different lunch entirely.
